PIZZA BASE
INGREDIENTS A:
1 kg high protein flour
8 tablespoons milk powder
2 tablespoons sugar
1 teaspoon shortening
1 teaspoon dough softener
a pinch of salt
INGREDIENTS B:
2 tablespoons instant dry yeast
400ml water (boiled and cooled)
120ml Luke warm water
100ml cooking oil
2 tablespoons castor sugar
METHODS:
1) Mix well ingredients (A) | 2) In a small bowl, mix yeast and cooled water. Add in the lukewarm water and castor sugar. Stir till sugar dissolves and set aside until frothy. | 3) Pour the yeast mixture into (A) and knead till soft and smooth dough is formed. |
4) Divide the dough into 8 balls. Cover with damp cloth. | 5) Leave for about 25 - 30 minutes or till doubled the size. | 6) Roll flat and place on a greased (with oil) pizza pan. |
7) Lightly prick the dough with a fork. | 8) Spread the sauce and put the toppings. | 9) Bake in a preheated oven at 180 Celsius till done. |
NOTE:
1. I used cake flour
2. Did the method my way which is:
Sift flour and milk powder
Add in the yeast, shortening, dough softener and cooking oil
Dissolve both sugars (in A & B) in lukewarm water. I just used lukewarm water.
Pour the liquid into the dry ingredients and let my mixer does her work till a smooth dough is formed.
Made into 9 balls and arrange them on the baking tray sprinkled with flour.
Cover the tray with a clean plastic bag and on the oven just for a few minutes until it's just SLIGHTLY warm.
Off the oven and place the wrapped tray in it and let it proof.
THE SAUCE
INGREDIENTS:
4 Fresh tomatoes ~ diced
1 Onion ~ diced
2 Garlics ~ crushed
2 tablespoons tomato sauce
1/2 teaspoon celery salt*
a bit of dried sweet basil
a bit of dried oregano
a bit of sugar
Olive oil
METHODS:
1. Heat olive oil and put in the garlic till fragrant.
2. Add in the diced onion. Sauté till soft.
3. Add diced tomatoes and stir.
4. Add tomato sauce, sugar, celery salt, sweet basil and oregano.
5. Cook till the sauce is thick.
NOTE:
* You can just use sea salt instead of celery salt.
SOSEJ ROLL
BAHAN A:
500 gm tepung high protien
30 gm susu tepung
70 gm gula
1 paket ibu roti [11 gm]
1 s/k pelembut roti [optional]
1 biji telur
1/2 s/k garam
BAHAN B:
250 ml air
80 gm majerin
BAHAN C:
sosej
bijan
kuning telur
majerin
METHODS:
1. Masukkan dan gaulkan rata semua bahan A.
2. Masukkan air dan gaulkan lagi sehingga sebati.
3. Masukkan majerin dan gaulkan sehingga adunan kelihatan sebati [anggaran 10 minit].
4. Bahagikan adunan pada 60 gm setiap dan buatkan bulat2. Ketepikan.
5. Ambil 1 doh dan gelek supaya menjadi panjang (macam kopok lekor) dan lilitkan dikeliling sosej.
6. Perapkan sehingga saiz roti naik sekali ganda.
7. Sapukan dengan kuning telur dan taburkan sedikit bijan.
8. Bakar dalam suhu 200'C selama 20 -25 minit atau sehingga kuning keemasan.
9. Keluarkan dan sapukan majerin untuk kelihatan berkilat dan menarik.
10. Keluarkan dan sapukan majerin pada roti yg telah masak.
BUN DAGING
500 gm tepung high protien
30 gm susu tepung
50 gm gula
1 paket ibu roti [11 gm]
1 s/k pelembut roti [optional]
1 biji telur
1/2 s/k garam
INGREDIENTS B:
250 ml air
80 gm majerin
INGREDIENTS (INTI DAGING):
200 gm daging kisar [peroikan daging dan toskan]
1 bawang besar
2 ulas bawang putih
2 biji tomato
1 s/b minyak
3 s/b cili sos [jika nak pedas..tambahkan cili mesin]
3 s/b tomato sos
garam
minyak
METHODS (UNTUK INTI DAGING):
1. Potong dadu semua bahan.
2. Tumis bawang besar dan bawang putih hingga layu.
3. Masukkan daging kisar dan tambahkan garam serta tomato sos dan cili sos.
4. Kacau hingga daging empuk. Biarkan sehingga pekat.
5. Masukkan inti dalam pinggan dan biarkan sejuk.
METHODS:
1. Masukkan dan gaulkan rata semua bahan A.
2. Masukkan air dan gaulkan lagi sehingga sebati.
3. Masukkan majerin dan gaulkan sehingga adunan kelihatan sebati [ anggaran 10 minit].
4. Bahagikan adunan pada 60 gm setiap dan buatkan bulat2. Perapkan sebentar.
5. Ambil doh dan leperkan. Masukkan inti daging dan tutup semula.
6. Perapkan dalam lyang yg telah disapukan minyak sehingga saiz roti naik sekali ganda.
7. Sapukan dengan kuning telur.
8. Bakar dalam suhu 200'C selama 20 -25 minit atau sehingga kuning keemasan.
9. Keluarkan dan sapukan majerin untuk kelihatan berkilat dan menarik.
